Causita Stuffed With chicken

Causa de Pollo is a delicious traditional recipe from Peru that can be easily prepared at home. It is a cold dish that is served as a starter, with a very smooth and creamy texture. It is characterized by its layers of potato, avocado and chicken, which can be differentiated when served.

Ingredients:

½ k of chicken breast

1 k of yellow potatoes, preferably

1 large spring onion

1 lime or lemon (the juice)

1 ripe avocado

4 yellow peppers

Olive oil

3 tablespoons of mayonnaise

Salt to taste

1 pinch of pepper

In a saucepan, put plenty of water and a tablespoon of salt. Put the potatoes in pieces and the chicken breasts. Cook over high heat for 20 minutes, until the potatoes are soft and the chicken is cooked.

Meanwhile, cut the chili and chives into very small pieces. Reserve.

Remove the potatoes, drain and puree with the help of a masher or fork.

In a bowl, add the mashed potatoes, the chili pepper and the lemon juice. Add a drizzle of olive oil, a pinch of salt and a pinch of pepper. Knead well until the ingredients are integrated and form a creamy dough. Divide the dough into three parts. Reserve.

Remove the chicken breasts and let cool. Then fray them.

In a bowl, add the shredded chicken breasts, chives and mayonnaise. Mix and rectify the salt point. Reserve.

Peel and cut the avocado into 0.5 cm slices. thick.In a plate ring, place the following 5 layers: a third of the potato dough, a layer of seasoned avocados. Next, another third of the potato dough, the chicken mixture with mayonnaise and onion, and finally the remaining third of the potato dough.

When serving, remove the ring from the mold. It can be garnished with a sprig of parsley.
